Rainbow Fruit Salad

INGREDIENTS
1 pint strawberries, stemmed and cut in half (or in quarters if they are large)
2 Cuties oranges or tangerines, peeled and separated
1 kiwi, peeled, sliced, then quartered to make triangles
1 cup cubed pineapple
1 apple, cored and cubed
1 cup red grapes
1 cup blueberries (or berry of your choice)
8–10 mint leaves, chopped
Dressing
3 tablespoons fresh lemon juice (about 2 lemons; substitute lime or orange, if desired)
1/4 cup honey or maple syrup (more or less to taste)
1/4 teaspoon vanilla extract

DIRECTIONS
1. In a large serving bowl, whisk the citrus juice, honey, and vanilla until combined; it helps to gently warm your honey by setting its container in a bowl of hot water to make it easy to whisk.
2. Add the cut fruit and chopped mint and gently toss to coat.
