Chicken Salads

SMOKED CHICKEN SALAD
INGREDIENTS
1/2 Red bell pepper diced
1/2 red onion diced
2 celery ribs sliced
Smoked chicken
DRESSING
1 cup mayonnaise
1 Tbsp apple cider vinegar
1 Tbsp fresh lemon juice 1/2 lemon
1 tsp smoked paprika
Salt & pepper to taste

Combine sauce ingredients in a bowl, whisk well. Add everything else and toss gently.

ITALIAN CHICKEN SALAD
INGREDIENTS
Shred or dice chicken
1 yellow bell pepper diced
1/3 cup roasted red pepper diced
1/4 red onion thinly sliced
3/4 cup chopped Italian parsley
1/2 cup slivered almonds
2-3 strips cooked crispy bacon, diced
Top with grated parm
DRESSING
2 tbsp red wine vinegar
1 teaspoon Dijon mustard
Italian seasoning
1/4 cup EVOO
Sea Salt and fresh cracked pepper to taste

Combine sauce in a bowl. Whisk. Add everything else and gently toss. Serve on French bread slices or butter lettuce.

YELLOW CURRY CHICKEN SALAD
INGREDIENTS
Shred chicken and remove skin
1/2 apple diced into squares
1 celery rib diced
1/4 red onion finely diced
1/4 cup raisins
1/4 cup dry roasted cashews roughly chopped
1/4 cup fresh cilantro rough chop
DRESSING
1/2 cup Mayo
2 tsp yellow curry powder
1/2 lime juiced
Pinch of salt to taste
Pinch or red pepper flakes to taste
