Mexican Shrimp Salad

INGREDIENTS
2 cups frozen shrimp, peeled and deveined
1 large avocado
1 1/2 cup grape tomatoes
1/2 medium-large cucumber
1/4 red onion
3/4 cup cilantro
1 large mango
1 small jalapeno
2 tbsp olive oil
2+ tbsp fresh lime juice (to preference)
honey (optional)
tajin seasoning (optional garnish)

DIRECTIONS
1. Cook shrimp on stovetop according to package directions (can cook from frozen).
2. Chop tomatoes, cucumber, mango, onion, and cilantro and add to a bowl with cooked shrimp.
3. Finely mince jalapeno and add according to your spice tolerance.
4. Add olive oil and lime juice.
5. When ready to serve, chop and add avocados, then garnish with honey and tajin seasoning.
