Vegetable Hummus Wrap

If you are looking for an easy healthy meal, try making a vegetable hummus wrap. It’s quick to assemble and tastes delicious. Just microwave a whole-grain tortilla, spread it with hummus, and layer on an assortment of vegetables. Once that is done, wrap it up like a burrito and enjoy! You can use whatever vegetables you have on hand.

Vegetable Hummus Wrap 

Ingredients 

  • 2 (12 in) whole-grain tortillas
  • ½ cup hummus
  • ½ cup spinach or kale
  • ½ cup tomato, diced
  • ½ avocado, sliced
  • ½ cucumber, sliced

Instructions
Microwave the whole-grain tortillas so they are pliable. Spread hummus over the tortillas and then layer on assorted vegetables. There are vegetables listed in the recipe but feel free to exchange them shredded cabbage, sprouts, bell pepper or turnip strips, or other vegetables of your choosing. Wrap up the tortillas like burritos and enjoy.
