BYU Crumble Bars

Cranberry-Apple Crumble Bars
Crust:
1 1/2 cup whole oats (not steel cut, not instant)
1/2 cup oat flour (or wheat flour)
1 cup white flour
2/3 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup softened butter
1/3 cup light-colored olive oil

Stir together dry ingredients. Cut in softened butter and olive oil to make a crumble. Firmly press 2/3 of crumble in bottom of 9x13 pan.

Filling:
4 cups (sliced and peeled) apples
1/2 cup dried cranberries
2 tablespoons sugar
1 teaspoon cinnamon

Stir cranberries and apples together. Sprinkle with cinnamon-sugar. Spread across crust. Sprinkle with remaining 1/3 oatmeal crumble. Bake at 375 degrees for 25-30 minutes.
