INGREDIENTS
3 ripe bananas (esp. dark brown—plan ahead to toss in fridge to brown more quickly)
1/3 cup creamy peanut butter or other nut butter
6 large eggs
2 cups milk (or substitute with any non-dairy milk)
3 cups old-fashioned rolled oats
1/4 cup maple syrup (or swap for brown sugar, honey, or coconut sugar)
1 teaspoon baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
1/2 pkg milk chocolate chips
1 1/2 cups pecans or walnuts (optional)
INSTRUCTIONS
1. Preheat oven to 375°F.
2. In a large mixing bowl, combine mashed banana with peanut butter, then whisk in eggs and milk.
3. In a separate bowl, mix all dry ingredients (except for chocolate chips).
4. Add dry ingredients to wet mixture and combine. Stir in sweetener. Fold in chocolate chips.
5. Grease non-stick muffin tin with cooking spray. Spoon 1/3 cup of mixture into each cup.
6. Bake for 25-30 minutes. Allow cups to cool before eating.
7. Store in refrigerator or freezer until ready to eat.
