This recipe is a good late-night snack that will not detract, as much as other processed snacks, from high-quality, restorative sleep. This recipe was presented in our September 2022 Food Demo from BYU Dietetics Graduate Interns.
Ingredients
1-1/2 cups quick cooking rolled oats
1 cup shredded coconut flakes
1 cup dried cherries
1/2 cup dark chocolate chips
1/2 to 3/4 cup peanut butter
1/4 tsp vanilla extract
Instructions
- In a large mixing bowl, combine all ingredients.
- Chill mixture in the fridge for 30 minutes.
- Remove from fridge and form into balls.
- Place back in fridge for 20 minutes.
- Remove from fridge and serve.
Makes 24 energy bites.
