Energy Balls

Energy balls are a great way to get more protein and healthy fats into your diet in a delicious way.
Here is a basic recipe for energy balls.

Ingredients

1 cup pecans
1 cup walnuts
1 cup shredded unsweetened coconut
2 cups soft dates (pitted)
1/2 tsp vanilla extract
1/2 tsp sea salt

Instructions

  • Add pecans, walnuts, and shredded coconut into a food processor (or blender). Process until the mixture is crumbly.
  • Add the rest of the ingredients. Process until the mixture is sticky and crumbly but don't over process.
  • Scoop our the dough and form balls with your hands.
  • Place in the fridge for at least 30 minutes before serving.

You can mix and match the types of ingredients you use to create different flavors. You can replace the nuts with oats, change up the nut butter, try a different kind of dried fruit, and add more nutrient packed ingredients to spice up your energy balls.
