Warm Winter Salad

Ingredients:

  • Chopped Greens of Your Choice (I enjoy a mix of chopped kale, romaine and spinach)
  • 1 Rotisserie Chicken
  • 1 Sweet Potato or ½ of a butternut Squash
  • 1/2 red onion
  • Sliced cherry or grape tomatoes
  • Crumbled Blue or Feta Cheese
  • Sliced Avocado
  • Honey
  • Salt
  • Pepper

Instructions:

  • Peel and chop sweet potato into about 1 cm cubes(or butternut squash) and toss in about 1 tbsp of olive or avocado oil and salt and pepper. Roast at 350 degrees for 45 minutes – 1 Hour. (Sweet Potato may take less time) Cook until you can easily pierce with a fork
  • Shred Rotisserie Chicken.
  • Finely chop red onion.
  • Toss some greens, a few sliced tomatoes, chicken, sweet potato, a small amount of onion together. Drizzle with about ½ tbsp. of honey and season with salt and pepper to taste. Give it another toss.
  • Top with cheese and sliced avocado.
