Loaded Baked Potato

INGREDIENTS
3 medium potatoes
2 cups broccoli florets
meat of choice (beef/turkey sticks, ham chunks, cut bacon, etc)
1/2 tbsp avocado oil
1/4 tsp garlic powder
salt & pepper to taste
Sauce:
1/2 cup soaked cashews
6 tbsp water
1-2 tsp hot sauce (with no added sugars)
1/4 tsp paprika
pinch cayenne pepper

INSTRUCTIONS
1. Preheat oven to 400 degrees and bake potatoes for 50-60 minutes until cooked through.
2. Make sauce by putting all ingredients into a blender and blend until smooth.
3. When there is about 5 minutes left on the potatoes, make the filling. Add oil to medium-sized pan over medium heat and let it get hot.
4. Add meat of choice if it needs to be cooked.
5. Add broccoli, garlic powder, salt, and pepper. Saute for 3 minutes, or until broccoli is tender.
6. Cut a slit in the potato and make room for filling.
7. Divide filling evenly and top with sauce. Enjoy!
