Sneaky Veggie Pasta

INGREDIENTS
4-5 whole tomatoes
1-2 zucchini
2-3 carrots
1 red bell pepper
1 onion
1 head garlic
1/2-1 cup coconut milk
1/2 cup asiago cheese
pasta of choice
red pepper flakes (optional)

INSTRUCTIONS
1. Halve tomatoes. Chop zucchini, onion, red pepper, and carrots. Chop tip off garlic. Arrange on baking sheet and season with salt, pepper, and oregano. Roast for 40 minutes.
2. Add all veggies to a blender and blend into sauce. Blend in coconut milk to your preference.
3. Cook and drain pasta. Stir in sauce and top with asiago cheese and red pepper flakes.
