Mango Cashew Salad

INGREDIENTS
2 cups cubed mango
1 cup avocado
2 cups diced cucumber
1 cup steamed corn
1/2 cup diced red onion
1 cup diced bell pepper
3/4 cup cashews
2 cups kale (optional)
1 cooked chicken breast, shredded or cubed (optional)
Creamy Cilantro Lime Dressing
1 head cilantro
1/4 cup lime juice
1/3 cup avocado oil
3 tbsp water
1/2 cup cashews
1 tsp salt
1 tsp garlic

INSTRUCTIONS
1. wash and chop mangoes, avocado, cucumber, red onion, bell pepper, and kale and add to salad bowl. Add corn and cashews, and add chicken if desired.
2. Place all of the dressing ingredients in a blender together and blend until smooth.
3. Mix dressing into salad and serve.
