INGREDIENTS
1/4 cup fresh basil
2 cans chickpeas
1 medium-sized cucumber
2 cloves garlic
1 cup grape tomatoes
1/4 cup fresh parsley
1 red bell pepper
1/4-1/2 red onion (depending on preference)
1/2 cup kalamata olives
2 tbsp lemon juice
3 tbsp olive oil
1 tbsp red wine vinegar
salt and pepper to taste
INSTRUCTIONS
1. Chop bell pepper, cucumber, tomatoes, onion, basil, and parsley and mix in salad bowl. Add chickpeas. Mince garlic and add to bowl.
2. Add Olives, lemon juice, olive oil, and red wine vinegar and mix thoroughly.
3. Add salt and pepper to taste. Enjoy.
